Rhonda’s Spicy Chicken and Broccoli Stir Fry

So I tried this new recipe tonight and it is really a winner!  I often make stir fry but this was a “new” recipe I tried because I needed a change. I think my husband could easily transition to meal rations if we ever colonize the moon or Mars. I on the other hand need much more variety in my life.  I’ll stay here on Earth and try to figure out how to not kill off plants in my garden every year.

 

I describe the recipe as “new” because I have had a card in my recipe box for years that I just never tried.  So when I started thumbing through the cards in the box I ran across it, then I made some key changes to come up with my own version.

 

Here it is:  Rhonda’s Spicy Chicken and Broccoli Stir Fry

1 or 2 Tbsp. olive oil

1 lb. boneless, skinless, chicken breasts cut into bite-sized pieces

4 cups vegetables (broccoli florets, red bell pepper strips, sliced water chestnuts)

1 1/2 cups chicken broth

2 Tbsp. low-sodium soy sauce

2 Tbsp. cornstarch

1 tsp. garlic powder

1 tsp. ground ginger

1tsp. red pepper flakes (less if you don’t want the heat)

3 cups Jasmine Rice, cooked

 

Cook your rice and have it hot and ready.

Gather all your ingredients; measure everything and have it ready beside the stove. Cut up the vegetables. I cut a fresh red bell pepper into strips, place in a 4-cup measuring vessel, then drain a can of sliced water chestnuts and pour over bell pepper strips, then top off with frozen broccoli florets.

Place oil in large, hot skillet. Add chicken and fry until browned. Add vegetables; cook and stir until hot but still crisp.

Mix broth, soy sauce, cornstarch and spices together and add to skillet. Bring to a boil and allow to boil for 1 minute.

Stir to coat the chicken and vegetables. It’s properly thickened and ready to top your cooked rice when the spoon leaves a trail across the bottom of the pan.

Now you have another stir fry go to meal that cooks up extremely fast and satisfies the eyes as well as the belly while remaining low-fat and delicious.
